Recipe: Try these Croissants for an Easy Tailgating Meal

For those of you who want to think outside the grill when you are tailgating, this recipe offers an alternative to hot dogs and hamburgers and is easy to make.

  • Croissants (or sourdough Buns)
  • 2 packages of boneless chicken breasts (about 6)
  • 1 to 2 cups of Lite Miracle Whip
  • ¼ cup of diced red pepper
  • ½ cup of diced onion
  • 1 cup of cashews
  • Seasonings: garlic salt, basil, crushed red pepper, onion powder

(Serves about 15-20)

Boil chicken breasts in large pan until tender (about 30-60 min.)  While chicken is boiling, dice up red pepper and onion and place in large bowl.  When chicken is fully boiled, allow to cool on cutting board for about 15-20 min.  Cut chicken into small chunks and season while on cutting board.  Sprinkle desired amount of garlic salt, basil, onion powder and a sprinkle of crushed red pepper.  Then add seasoned chicken to bowl. Stir in miracle whip until you reach desired consistency. Add cashews and stir well.  Spread on croissants for a tasty sandwich. 

For less fat, substitute sourdough buns for the croissants. These chicken salad croissants go well with a slice of seedless watermelon and “Cheetos Natural White Cheddar Cheese Puffs” made with organic ingredients without preservatives, artificial flavors or colors. 

After eating this delicious, healthy meal, you are bound to score well at the corn hole toss!
