Quick & Easy Baked Tomato & Cheese Casserole

tomato casserole 1During this time of year, when we have oodles of tomatoes multiplying in our gardens, many of us are looking for different ways to use them in our kitchens. Here is a very quick and easy recipe that will knock your socks off, (I mean flip flops,) because it is so incredibly tasty! You can use red or green tomatoes but this recipe is shown with red.

  • 4 large tomatoes
  • Non-stick cooking spray
  • Sea salt
  • Pepper
  • Onion powder
  • Parmesan cheese (about ¼ cup)
  • Cheddar cheese (about 1 cup)
  • Tin foil

Servings: 4-6

tomato casserole 2Preheat oven to 350 degrees. Rinse tomatoes and cut into thin slices. Spray casserole dish with non-stick cooking spray. Layer bottom of casserole dish with tomatoes. Then add sea salt, pepper, onion powder, parmesan cheese, and finally, cheddar cheese. Repeat layering. Cover tightly with tin foil and bake for about 30 minutes.

If you decide to make this recipe with red tomatoes, try using green next time!
