‘Green’ Eggs and Ham

I think Dr. Seuss may have been far ahead of his time back in 1960 when he released his book, “Green Eggs and Ham.” Eighteen years ago, I began reading Dr. Seuss to my eldest son, followed by my other two children. Night after night, we would laugh as he entertainingly introduced the green concept in rhymes. Nobody knew what he was talking about.

Yet today, he would be so proud of how many people are “going green” or becoming eco-friendly in their kitchens. That is, they are cleaning with chemicals and baking with ingredients which stem from the practice of not only maintaining balance with other living organisms in the environment, but also trying to find ways not to cause permanent harm to our planet.

Here is a recipe for a healthy omelet made up of organic, cage free eggs, (hence, green eggs) and low fat ham. Since I haven’t heard of organic ham yet, I used a brand free of hormones, additives, colors, etc. In addition, I added red and green pepper, onion and cheddar cheese.

INGREDIENTS:

2 organic, cage free eggs (Eggland’s Best used here)

3 tablespoons of lean ham cut up into small chunks

1 tablespoon of onion, diced

2 tablespoon of red pepper, diced

2 tablespoon of green pepper, diced

2 teaspoons of margarine (smart balance used here)

3 tablespoons of cheddar cheese

Sprinkle of sea salt

Sprinkle of pepper

(Serving Size = 1 omelet)

In a small frying pan, melt butter. In a separate bowl, combine eggs, onion, red and green pepper and blend well. Pour into pan and turn heat down to low. Add salt and pepper. Add a small amount of water to the top of egg mixture (about 2 tablespoons) and cover with a lid for about 1 minute. (By steam-cooking the top of omelet, you will not need to flip the entire omelet upside down in order to cook the other side.) Once the top is cooked, add cheese and turn burner off. Using a spatula, lift up one half of omelet and fold over to form a half-moon shape. Serve with toast and jam.

If only we could meet Dr. Seuss today, my kids and I would willingly serve him the greenest, tastiest breakfast ever!
