Do you look for creative ways to cook your leftover holiday turkey? This recipe is my rendition after merging many recipes together over the years and is my family’s favorite for making our surplus of turkey taste so delightfully exquisite. This simple yet royal dish would surely please any king. This meal is served over rice, but it is also exceptional when served over toast!
Ingredients:
¼ cup margarine or butter
2 cups of fresh mushrooms
1 medium/large onion diced
2 stalks of celery diced
1 small red pepper diced
1½ cup of frozen green peas (cooked)
1/3 cup of all-purpose flour
1¾ cups milk
¼ cup of cream (fat-free half & half, used here)
1 cup chicken broth
3 cups (or more, if desired) of cubed cooked turkey
1/3 cup dry cooking sherry
½ teaspoon salt
Dash of crushed red pepper or ¼ teaspoon pepper
Rice, noodles, toast, biscuits, or pastry shells
(Serves 4)
In a saucepan, melt margarine/butter. Add fresh mushrooms, onion, celery and red pepper. Stir in flour, salt and either crushed red pepper or black pepper. Add chicken broth and milk all at once. Stir in turkey and dry cooking sherry. Bring to a boil and then simmer until sauce starts to thicken. Add cooked green peas and cream. Continue to simmer until mixture is evenly warm throughout. Serve over cooked rice, noodles, toast, biscuits, or pastry shells.

No it’s not the 1970s. We are in the year of 2008, and I just ate turkey a la king today and it’s the most amazing meal I’ve had in a long long time. Who cares what year it is, it just matters how good the food is your eating. “Don’t knock it ’till you try it.”
P.S. Pizza has been around for centuries and it still seems to be a hit!
I second the recommendation. We just used up the rest of the leftover Thanksgiving turkey. This dish was scrumptious! I had to substitute sour cream for the cream and additional chicken broth for the sherry, and I omitted the peas and celery. Still, the result was quite tasty and well-received by my family.

Thank you Laura for your kind response! When I read your comment I had to laugh because my substitutions were almost the same as yours. I omitted the celery because I was out of it and the peas because my daughter prefers to leave them out. Although I used the sherry, I also used sour cream because I didn’t have any cream. We enjoyed our meal over rice and my husband used toast.
