In the fall when apples are coming into season, we usually think of eating apple pies, crisps or cobblers. But I have an apple recipe that is very quick and easy, and you don’t have to put it in the oven. This simple apple salad is great for completing any meal, and it counts as a fruit serving. This recipe is very popular among all ages! You can use any apples you desire, but I especially like the organic Fuji, Gala and Granny Smiths.
Note: If you use Granny Smiths, you may want to mix half of these and half of another type because of their tartness. Also, the green skins on the Granny Smiths contrast well with the red skins on other varieties, making the salad appear more colorful.
Ingredients:
4 large apples (Gala used in the photos here) washed and diced
1 stalk of celery, cleaned and diced into very small chunks
½ cup of sour cream (low-fat used here)
½ cup of pecans, chopped into moderate sized chunks
1 cup of miniature marshmallows (I used Kraft Fun Mallows, which are not only colorful but flavored in orange, strawberry, lemon and lime.)
Mix together apple pieces, celery, sour cream and pecans. Then top with marshmallows. Note: If the marshmallows get mixed in with the sour cream too early, they have a tendency to become slightly soggy.
Makes approximately 10-12 servings.
