Dad Will Be Delighted with Father’s Day Strawberry Delight

Father’s Day is quickly approaching. Whether you take dad out to his favorite restaurant or you decide to grill out in your own backyard, this frozen dessert is a refreshingly cool sensation on a hot summer day.

Here is a simple recipe guaranteed to make Dad feel instant happiness and forget any stress in his world. Everyone will appreciate this luscious dessert which can be made ahead of time for your convenience, as it is placed in the freezer until ready for serving.

STRAWBERRY DELIGHT

1 cup flour
¼ cup firmly packed brown sugar
½ cup chopped pecans
½ cup melted butter or margarine
1 10 oz. pkg. frozen strawberries (thawed) or 1½ cups sliced fresh
Strawberries
1 cup sugar
2 teaspoons freshly squeezed lemon juice (optional)
2 egg whites
½ pint whipping cream, whipped or 1 small tub of cool whip

Combine flour, brown sugar, pecans and butter. Bake for 20 minutes in a 350 degree oven in a 9 inch square pan, stirring often. Let cool.

Combine strawberries, sugar, lemon juice and egg whites. Beat at high speed about 20 minutes or until light and fluffy. Fold whipping cream into strawberry mixture. Remove 1/3 of crumbs mixture from pan. Pat remaining crumbs into smooth layer. Pour strawberry mixture over crumbs in pan and sprinkle remaining crumbs over top.
Cover and freeze. Makes 8-10 servings.
